I have a question for you and anyone else who wants to chime in.
Would you see any issues playing Sabbath stuff using drop C# tuning as
opposed to C# standard? I've no problems figuring out "how" to play the
stuff in drop C# but I'm wondering if I will have intonation or other issues
doing that as opposed to standard C#. I know a lot of stuff is also played
in standard or 1/2 step down but I'm talking strictly the C# stuff.
I go back and forth on this all the time and never have really come to a
"best way" to do it.
Also any tips for set up doing this is appreciated. For now I'll be using
two Peavey EXP's both set up with Hip Shot strat style trems.

The riffs will lend themselves to C# tuning since that's the way they
were recorded... And by that, I mean ALL strings tuned down 3 steps...
As for the setup - just get heavier strings (slightly) and intonate for
THAT tuning...

I don't see any issues. If you feel confortable with drop C#, then go
for it.

As long as you find a string gauge that works and you adjust your
intonation accordingly, you should be okay. Part of Iommi's sound
comes from the looseness of his strings. Notes tend to go slightly
sharp with each pick attack (when the strings are flapping around),
then ease back into tune as the vibration lessens. This makes setting
the intonation a bitch. If you use a tuner, you'll see the needle or
LEDs go wild for a split second. But the reading should be true after
the attack.
As for string gauges... as you know, Tony uses 8's. I can't do that.
The strings feel way too flapity (points to anyone who gets the Sarah
Silverman reference). I like Ernie Ball "Not Even Slinkies". I think
they are 09-56 or something like that. The tension feels about right
when downtuning to B. For drop C#, maybe try a set of 11's?
